Eggplant Parmesan (atkins friendly)

 Salam to all,





I was going through some  low carb recipes for my hubby since he's trying to get in shape.

i saw this one and decided to make it for dinner since my husband LOVES eggplant and meat..


i just reduced the amount of cheese cuz its not his favorite.. he loved it! he wanted to eat more lol.. i gave him 2 tbsp more.. but thats it. [ if you're on atkins, you probably know what i mean]

anyways heres my lighter less cheesier version

ingredients:
1 eggplant
1 lb ground turkey
1 cup light ragu pasta sauce no sugar added
a drizzle of olive oil
1 tbsp mozzarella
1 tbsp parmesan

salad:
2 cups lettuce, chopped
1 plum tomato. chopped
2 tbsp fresh parsley, chopped
1 tbsp lemon juice
sprinkle salt and olive oil to taste.

*first slice the eggplant thinly (like in the video)
*u can do what the video says ( to coat with eggs then paremsan ) but i know he wouldnt like it with all the cheese going on, so i just laid the eggplant flat on a tray, drizzled olive oil then broiled for 5 mins on each side until brown

* for the ground turkey, brown it in some olive oil, add salt and pepper to taste, then add the pasta sauce to the mix..

* in a baking tray, layer the eggplant, then meat sauce, then eggplant, then meat sauce, then eggplant, then cheeses. u can put an extra tbsp of pasta sauce if u feel the top eggplant layer is too dry, then put the cheese.
put in 350 oven for 30 mins, then serve hot with salad.
