Roasted Leg of Lamb With Rice

Salam to all, 


My DH and family LOOOVE lamb meat, and this the way i prepare it ..Hope you enjoy!

Ingredients: Serves 2-4 people
For leg of lamb:
1 leg of lamb (bone in or out)
water, flour, and lemon juice for cleaning it


2 tsp salt
2 tsp black pepper
1/2 cup vinegar
1 tsp cinnamon
1/2 tsp ground cardamom
1 tsp onion powder
1 tsp garlic powder
1 tsp mixed spices
1/2 tsp ground cloves



olive oil, juice of 1/2 lemon, ( sliced lemon, chopped parsley for garnish)


For Veggies: (Rice garnish)
1/2 bag frozen peas + 2 carrots, diced  (or 1/2 frozen peas & carrots, mixed)
1 onion, diced
5-6 large garlic cloves, diced
2 tbsp oil (for stirfrying) 
1/4 tsp black pepper
1/4 tsp paprika
1/4 tsp mixed spices
1/2 tsp knorr powdered bullion

1/2 cup nuts, toasted (pine, almonds, both, whatever...)


For rice:
1 1/2 cups basmati rice
2 1/4 cups water
1tsp turmeric
1tsp mixed spice
2tsp knorr
1/4 tsp ground cardamom
1/4 tsp black pepper
1/2 tbsp butter





Directions:


Get ur leg of lamb and try to trim as much fat as possible. ( just beware of the smell.....)\
Cut a slit lengthwise as nearest to the bone as u can.
Cut another slit on the other side. This woul be perfect if u want to stuff it with anything. 
Usually I stuff it with the pea mixture that I'm making today for the rice. 
U can do either one, stuff the leg or put on the rice.


Clean with water, flour, and some lemon juice
U can use the artificial lemon juice it doesn't matter for cleaning
Try to get off as much fat as u can but if u dont have time its ok. It will melt in the oven





Add all spices together and rub it in with ur hands in every small groove to ensure flavor reaching everywhere...

Fully seasoned. U can see the seasoning stuck to the meat.


let sit for an hour or so in the fridge.. if u dont have time, just go ahead and cook..

Place in oven bag and tie real tight
Put In oven at 375 for at least 2.5 hrs. Or at 350 for 3hrs. Depending on how much time u have


Peel and finely dice 2 large carrots. U will also need 1/2 bag frozen peas. If u have the frozen peas n carrots mix then just use half a bag of that.
Slice the onions, Chop the garlic if u are adding it to the pea nix
Then heat some oil in a frying pan,stir fry the garlic, onions.. (if you have little extra piece that fell off the leg.. chop and use here )
Add the carrots and cook until soft, then the peas, cook on meduim low for 6-8 mins.
When done, put all the spices and toasted nuts.. mix thouroughly




Now to cook the rice... Put 1-2 tbsp canola/olive oil (whichever u prefer) and add 1 1/2 cups if basmati rice. This serves 2-3 people.
Stir fry until opaque, then add the water, when it boils add the rice spices.
Let it boil until the water dries off of the rice.
Now cover the pot and turn stove to lowest heat



When the rice is fluffy like so, it is done.

When the meat is done, take it out of the oven bag... And then broil it lightly for few mins. dont leave it long or else it will dry up
Baste with olive oil, then put it under a high broiler for max 5 mins on each side. Then take out, and squeeze half a lemon on it. 




Garnish with parsley and lemon slices and add over bed of rice on a large platter. 
Garnish the plate with the pea mixture on the sides.



 Serve with salad and plain yogurt.. Sa7teeen ^_^ Hope you like it.

  2. Salam, thank you! Mixed spices بهارات مشكلة is also called 7 spice, or arabic spice.. It is contained of a mixture of 7 different spices :

    2 tbsp Freshly ground black pepper
    1 tbsp Ground coriander
    1 tbsp Ground cloves
    2 tbsp Ground cumin
    ½ tsp Ground cardamom
    2 tsp Grated nutmeg
    ¼ tsp Ground cinnamon

    So you can make this mixture and keep in a spice jar, and use when needed. I'll post it as a real post as well for everyone to find
