Today's Dinner: A twist to Meatloaf

I'm making Meatloaf tonight, since i found groundbeef for 1.99/lb.. i got 3 lbs and here is my recipe:

Groundbeef
1 small onion
1 bunch parsley
1-2 garlic cloves
half a jalepeno pepper
1 egg
1/2 cup milk
3 slices whole wheat bread
salt ( i use chicken boullion powder instead, about 1.5 tbsp here)
black pepper to taste
2 tbsp ketchup
1 tbsp allspice
1 tbsp ground cardamom ( optional)
dash of ground cloves
dash of ground cinnamon


For the tomato sauce covering the meatloaf

2 8oz can tomato sauce
1 tbsp brown sugar
1 tsp mustard ( or to taste)
ketchup (optional)


1. Heat oven to 375 F
2. In a deep bowl, beat the egg, then add the milk, then crumble the 3 slices of bread. ( You can use breadcrumbs easily also). Let sit til all bread is moist
3. In a food processor, put in the onion, parsley,half pepper and garlic. Turn on til everything is chopped up really tiny.
4. When bread is all moist, add the groundbeef and the parsley mixture. Then add all the ketchup & spices i mentioned above.
5. Mix with hands ( almost like kneading dough) to make sure everything is uniformly mixed..
6.Put in pan, shape it like a loaf. (high in middle, low on sides) then put in the oven
7. Prepare the tomato sauce: Mix all ingredients together ( tomato sauce, brown sugar, mustard, ketchup) in a bowl till sugar has dissolved.
8. After 25 mins in the oven, spoon the tomato sauce mixture on the meatloaf till everything is covered. Place back in oven and repeat every 10 mins.
9. Puncture a hole, using a fork, into the meat from the top. If the juices run clear, then the meatloaf is ready.. It should take between 45 mins- 1 hr to cook the whole 3 lbs. If the juices still have blood, then leave in oven for another 10-15 mins.
10. When done, cut meatloaf into 1 inch slices and serve with rice or pita bread and some salad.
