Coconut custard pie

from Taste of Home Magazine.. Oct/Nov 2010 edition

prep: 20 min
bake: 45 min + cooling
8 servings.. (unless ur like me and consider half a pie one serving)

Pastry for single crust pie ( 9 in)... all the premade ones had lard in them, so i just used a old fashoined graham cracker pie crust.. tasted alright.. {u can make ur own as well, i didnt have a recipe and was too eager to try it}

1 cup flaked coconut, chopped
3 eggs, beaten
2 2/3 cups 2% milk
2/3 cup sugar
3 tbsp flour
1 tsp vanilla extract
1/2 tsp salt
1/4 tsp ground nutmeg

Directions:
1. prepare the crust, bake and cool. then sprinkle the coconut over crust.. set aside
2. combine eggs, milk, vanilla, sugar, flour, salt, pour over coconut, sprinkle with nutmeg..
3. bake, uncovered, at 350 for 45-50 mins, until knife inserted near the center comes out clean. Cool on wire rack, then refrigerate.. cuz it tastes best cold!!

btw, the pie puffs up a bit once its done, but 5 mins after taking it out of the oven it settled and came back down. it kinda scared me a bit cuz i wasnt expecting that.. "pie baking amatuer here " ^_^

Just imagine a huge mountain of whipped cream on top of this :) yummmmmmmm
