ingredients:
4-5 carrots
a head of cauliflower
5-6 cucumbers
2-3 jalepenos
salt
water
vinegar
garlic
you will need a head of cauliflower, 4-5 carrots, 5-6 small cucumbers or 2 large ones.
Wash very well and peel the carrots. you can leave the skin on the cucumbers.
cut the carrots and cucumbers into long thin pieces, like french fries... then cut the cauliflower into small florets and wash
i got 2-3 jalepenos and sliced them lengthwise. if you want it more spicy just add more, or add a pepper thats really spicy...
now stuff the jar you have until theres no more room left.
For the water, my mom told me to pour in water to cover everything, then pour it back out (while keeping veggies still in) in a measuring cup and thats how much water u'll need for the jar.
then get clean water in the same amount. add salt til its salty but not too salty.. (lol im really not good with measurements) and i crushed 3 cloves of garlic and 1/4 cup vinegar. Mix well then pour it into the jar.
close it real tight and let sit for at least a week. enjoy!!

ReplyDeleteI need to do this. I love mixed pickled veggies, in spite of the salt. Now I can do my own with extra cauliflower & carrots, my favorites.

you can either put it in the fridge or let sit out.. We usually eat ours within 2 weeks, So i havent experimented how long it can stay, but im assuming a couple months at least..
