Roasted Split chicken with veggies

Salam to All,

Today's recipe is Oven Roasted split chicken, with carrots and potatoes.
This is Atkins friendly, if u omit the potatoes.




Ingredients: You will need

1 chicken, whole, split in half lengthwise between the chicken breasts.. and laid flat.. as in photo
2-3 cups chopped veggies (any kind u like roasted : can be carrots, mushrooms, zucchini, onions, potatoes, bell peppers, tomatoes.). whatever is in the fridge..
1 tsp salt
1/2 tsp black pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp lemon pepper
1 tsp paprika
1 tsp sumac
1/4 cup or less vinegar
1 large oven bag. Or just wrap with foil
optional:
1 tsp ginger powder
1 tbsp Italian seasoning
any other spices u like


Directions:
clean and split the chicken.


place chicken in oven bag and add all spices, then rub it on all sides of chicken. let marinate for 30 mins. Add the veggies in as well.


Bake at 400 for about 1hr 15 mins. Check to make sure all is well done.

garnish with some minced parsley and lemon wedges.

take out of oven bag and put in serving dish.. Serve with rice and salad. If you're on atkins, just eat the chicken and veggies and make sure to count the carbs as usual.

  1. Looks good, masha'allah! Just wondering why you split it as opposed to leaving it whole...does it cook quicker or differently?

  2. My mother-in-law sent me like 10 boxes of the oven bags...2 years ago. Still haven't used them. If my chicken defrosts in time, I'll make this tonight.

  3. to be honest, i was meaning to cut it, then got lazy.. i personally think it cooks quicker since the whole chicken is flat (instead of being round and the inner breast not cooking well or the outside drying up by the time the inside was done), so the heat distributes evenly throughout the chicken, specially the breast.. and its a little faster too.

    and my DH loves the way it looks LOL.. he always asks for the "chicken that was ran over" hahaha
