Sorry i haven't been posting as often as i would like to, but kids are in school now and i'm taking advantage of the couple free hours i have! So here we go!
This dessert is very similar to bread pudding, sweet, moist and u can use leftover bread or croissants! (or puff pastry).
Ingredients:
1 tube croissants dough (like Pillsbury) or 8 small ready ones. Torn to bite size pieces.. or 1 sheet of puff pastry, baked, torn.. {or its equivalent of thin white flatbread.. } I PREFER CROISSANTS
1 12 oz can evaporated milk
1.5 cups or 12 oz milk
1/2 cup chopped almonds and walnuts mixed
2 tbsps raisins (optional)
2 tbsps coconut flakes
1 tbsp cinnamon
1/2 -2/3 cup sugar (to taste)
Directions:
1- bake the (croissant/puff pastry) dough and let it cool.. if u already have some on hand u saved some time!
2- once cooled, torn them up into small piece and place into a deep baking dish.
3- preheat oven to 375 F
4- in a deep bowl, empty the evaporated milk, then fill the empty can with milk (to save yourself some dishes to wash) and mix together, add the sugar. set aside.
5- sprinkle the mixed nuts, coconut, and cinnamon onto the bread pieces, then pour the milk over and make sure everything got coated with the milk.
6- place in the oven for about 20 mins, or until bubbly and the top is slightly browned..
7- remove and let it cool for 10 mins then serve!

I get it. It's a kind of bread pudding. I'll have to try this. My mom lived years in Louisiana, where bread pudding is famous. She is quite a critic of it. I'm sure this recipe will dazzle her. :)
