Shrimp Fettuccine

Salam to all,

This dish is one of my favorite comfort foods, basically because it combines two of my favorite ingredients: pasta and shrimp! And here is my quick version of how to make it :)

Ingredients: serves 3-4

1/2 box fettuccine ( 8 oz), cooked
1-1.5 lb shrimp, peeled, deveined. Doesn't matter if cooked or raw
1 6oz can of mushrooms, drained
1/2 cup half&half
1 small onion, chopped

2-3 garlic cloves, minced
2 Roma tomatoes, chopped
1 tbsp basil (fresh or dry)
1 tbsp oregano ( fresh, dry)
2 tbsp parsley (fresh or dry, preferably fresh)
2-3 tbsp vinegar
1 tsp cornstarch
1 tbsp chicken bouillon powder
1/8 tsp black pepper
3 tbsp grated Parmesan

Directions:
1. Heat oil, sauté onions and garlic til tender, but not much browned.
2. Add mushroom and stir, cook for 3 mins

3. Add vinegar, cornstarch, bouillon, basil and oregano.. Then add half&half and Parmesan. And stir til slightly thick consistency, simmer for 5 mins.

4. Add the tomatoes, and parsley.. If shrimp is raw u can add now..

5. Cook for 5 mins then add the pasta, toss well and serve hot. ( if ur shrimp is cooked, then add right before u add the pasta, so it doesn't get tough and overcooked.. )

Garnish with parsley and lemon wedges and serve hot with a salad!

Sahtein!!

  4. Lol, probably cuz of the extra calories! U can use skim milk and add 2 tbsp of butter instead of the olive oil.. But it does Taste slightly different.. Try it!
